I don't know about Starbuck's coffee cake, I don't drink coffee. I am a bake-from-scratch person, this coffee cake recipe is the only one I make from cake mix. It is the most requested dessert I am asked to make for parties. This cake is so good you will never believe that a boxed cake can taste so good. Enjoy!

Ingredients

  • 1 package yellow cake mix
  • 2 packages of Betty Crocker pie crust mix (MUST be Betty Crocker - other brands do not work!)
  • 3 Tablespoons butter, softened
  • 2 Tablespoons cinnamon
  • 1 cup white sugar
  • 1 Tablespoon water, or more if needed
  • Powdered sugar

Preparation

Step 1

Preheat oven to 375 degrees F.

Prepare 1 package yellow cake mix according to the directions on the package. Pour into a greased 11x17 or 10x15 cookie sheet (I use the disposable aluminum ones). Bake 12 minutes at 375°.

Mix 2 packages of Betty Crocker pie crust mix (Jiffy or Pillsbury don't work well), 3 tblsp. soft butter, 2 tblsp. cinnamon and 1 cup white sugar. Add 1 tblsp. water, working in with a pastry blender. Mixture should be crumbly, not too dry and not too moist. Add more water, drop by drop, if mixture needs to be moister. Be careful not to add too much water, or you will have mush!

Top partially baked cake with crumb mixture and bake an additional 15 minutes. Cool in pan.

Dust with powdered sugar at serving time.

Keeps well for several days, but it never lasts very long at my house!
