Salsa Couscous Chicken

Ingredients
- 3 cups hot cooked rice or couscous
- 1 T oil
- ½ cup blanched slivered almonds toasted
- 2 cloves of garlic, minced
- 8 chicken thighs skin removed
- 1 jar Old El Paso Thick n Chunky Salsa
- ¼ cup water
- 2 T. (or more) golden raisins
- 1 T. honey
- ¾ tsp.cumin
- ¾ tsp. cinnamon

Preparation
Step 1
While rice is cooking, heat oil in large skillet over medium high heat until hot. Add garlic to skillet; cook and stir 30 seconds. Add chicken and cook 4 to 5 mins. until brown, turning once.
In a medium bowl, combine salsa and all remaining ingredients; mix well. Add to chicken and stir. Reduce heat to medium, cover and cook for 20 minutes or until juices run clear. Serve. Pour sauce over chicken and rice and sprinkle almonds on top.
