Ingredients
- 3/4 C butter
- 2 medium celery stalks, diced
- 1 medium onion, diced
- 1/4 lb mushrooms, chopped
- 1 C fresh breadcrumbs (2 slices bread)
- 1/4 t rubbed sage
- 4 1 lb hens

Preparation
Step 1
Cook 3/4 C butter, celery, onion for 5 minutes. Add mushrooms and cook until tender. Remove from heat; stir in bread, sage and 1/2 t salt. Spoon into hens lightly. Tie legs and tail of hen together. Sprinkle hens with salt. Roast 1 hour at 350 degrees. Brush with pan drippings.
