  • 1 tsp baking powder
  • 2 stick unsalted butter softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Frosting
  • 1 stick unsalted butter softened
  • 1 tsp vanilla extract
  • 3/4 tsp almond extract
  • 3-1/2 cups confectioners sugar
  • 2-3 tbsp heavy cream
  • Fruit Toppings
  • 1 kiwi, peeled and diced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 10 strawberries, quartered

Directions:

In a medium mixing whisk together flour and baking powder. In the bowl of a mixer, beat together unsalted butter and sugar. Once mixed add in egg and mix again. Next add vanilla.

Slowly add in flour mixture about a cup at a time. Mix until dough forms and begins to clump together.

Gather up dough and knead it with hands until it's nice and smooth. Roll into a ball and wrap in plastic wrap and place in the refrigerator until chilled.

Preheat oven to 350 degrees and line a large cookie sheet with parchment paper. I like to leave the dough in for about 45 - 60 minutes. If its too hard for rolling leave it out for a few minutes before starting. Divide dough in half and roll out one half onto the wax paper. Cut out cookies and place on prepared pan. Do the same with the other half of dough. Put cut out cookies in freezer for 2-4 minutes to set. Bake for about 7 minutes or until before they start to get brown around the edges.

While cookies are cooling prepare the frosting. Mix together softened unsalted butter, vanilla extract, almond extract and confectioners sugar. Add heavy cream until its the right consistency for spreading on the cookies.

My cookie was on the larger size and it made 16. Depending on the thickness of the dough and the size of cookie cutter this recipe could make more or less.
