Ingredients
- 750 grams water
- 400 grams sugar
- 5 grams salt
- Zest of 1 lemon
- 250 grams lemon juice
- 100 grams water
- 250 grams eggs
- 10 grams cornstarch
- 50 grams butter
- Meringue

Step 1
Combine the water, sugar, and salt in a pan and boil. Place the cornstarch, juice, and water in a bowl, and mix until blended. Add eggs to the juice mix pour a small amount of the hot liquid into the egg mix and mix well. Pour the egg mix into a pot and boil, stirring constantly. Remove from heat, add butter and cool slightly. Pour the cooked mixture into a pre-baked shell. Make the meringue and pipe onto the pie and brown at 400 degrees.
