Step 1

For the dough, knead the flour and butter, then add the yolks, sugar, salt, and lemon peel. Knead quickly. Chill the dough 30 minutes. Roll dough and line 2 3/4 inch diamter moulds. Bake at 350 degrees for 15 minutes and let cool.

Mix the flour, yolks, 1/2 cup brown sugar, lemon peel and pinch salt. Heat the milk then add the flour mixture. Bring the mixture to a boil and simmer over low heat for 4 minutes, stirring constantly, cool.

Peel the pears and cut into cubes. Saute them in butter, the remaining sugar, and the lemon juice. Pour the cream and fruit into the tart crusts and sprinkle with icing sugar. Arrange on a baking sheet and bake a few minutes until warm.
