Ingredients

  • Custard:
  • Recipe of pate brisee
  • 6 slices of cooked bacon
  • 2 eggs plus 2 extra yolks
  • 1 ½ cups of heavy cream
  • ½ teaspoon of salt
  • Pinch of white pepper
  • ¾ cup of imported Swiss cheese
  • ½ cup of grated Parmesan cheese
  • 2 tablespoons of butter in tiny pieces

Preparation

Step 1


1. Make the pate brisee and freeze overnight.
2. Roll unto a flour countertop and organize on a quiche pan.
3. Preheat the oven to 400 and cover the pan tightly with aluminum foil.
4. Bake for 10 minutes, and remove the foil.
5. Prick the pastry again, then return to the oven for 3 minutes.
6. Cool.
7. Put the bacon in the bottom of the pan.
8. Beat eggs, extra yolks, cream and seasonings.
9. Stir in the grated cheese and pour into pastry.
10. Sprinkle the top with small pieces of butter.
11. Bake at 375 for about 30 minutes or until browned and cooked.
