Ingredients
- 1/2 bag rice noodles (fresh)
- 1/2 kg bean sprouts
- 3 eggs
- pork, sliced thin
- firm tofu, cut into small slivers or squares and fried
- shrimp
- 1/2 c ground roasted peanuts
- 1 tsp ground dried chillis
- 1 Tbsp chopped shallots
- 1 Tbsp chopped garlic
- 1/2 c oil
- 4 Tbsp sugar
- 3 Tbsp fish sauce
- 4 Tbsp tamarind juice (or substitute vinegar)
- lime
- cilantro
- green onions

Step 1
Heat 3 Tbsp oil in pan. Saute garlic and shallots. When yellow, add noodles and add just enough water to soften them. Turn constantly with a spatula. Take out of pan.
Add 3 Tbsp of oil and cook pork. Add tofu and dried chili with shrimps. (You can reduce the amount of chillies if you want and just serve some on the side for people to add their own) Add fish sauce, tamarind juice, and sugar.
Return noodles. Mix thoroughly and move to plate. Add 2 Tbsp oil to pan and scramble eggs into thin layer. Add noodles and mix. Add the bean sprouts and mix.
Put on a plate and add peanuts, lime, cilantro, green onions, dried chilies. (These we usually have in a bowl and add what we want).
