Ingredients
- 2/3 cup sugar
- 1/3 cup butter or margarine, softened
- 1 t. vanilla
- 1/2 cup refrigerated or frozen egg product, thawed
- 1 cup flour
- 1/2 cup cornmeal
- 1 t. B.P.
- 1 (16 1/2 oz) can purple plums, drained, pitted, halved
- 3/4 cup crushed amaretti cookies or almond biscotti
- 1/2 t. powdered sugar, if desired

Preparation
Step 1
In large bowl, beat sugar, butter and vanilla until light and fluffy. Add egg product; beat until smooth.
Lightly spoon flour into measuring cup; level off. Add flour, cornmeal and baking powder; blend well. Spread batter in 8" springform pan sprayed with Pam. Arrange plum halves over batter leaving 1 inch border. Sprinkle with crushed cookies.
Bake 350* for 35 to 45 minutes or until toothpick comes out clean. Cook cake in pan 10 minutes. Remove sides of pan; sprinkle with powdered sugar. Serve warm or cool.
