Lemon Blueberry Biscuits

These biscuits are easy to make and a treat to eat. I got this recipe from my mother, who's a wonderful baker.—Kristin Dallum, Vancouver, Washington

Ingredients
- BISCUITS:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (8 ounces) lemon yogurt
- 1 egg, lightly beaten
- 1/4 cup butter, melted
- 1 teaspoon grated lemon peel
- 1 cup fresh or frozen blueberries

- GLAZE:
- 1/2 cup confectioners' sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon grated lemon peel

Step 1
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In a small bowl, combine the yogurt, egg, butter and lemon peel; stir into dry ingredients just until moistened. Fold in blueberries.
Drop by tablespoonfuls 1 in. apart onto a greased baking sheet. Bake at 400° for 15-18 minutes or until lightly browned. Combine glaze ingredients; drizzle over warm biscuits. Yield: 1 dozen.
Editor's Note: If using frozen blueberries, use without thawing to avoid discoloring the batter.

Very good! I added more lemon peel to the glaze so you can really taste it - and the zest looks pretty sitting on top of the biscuits
