Italian Winter Greens Soup (Tammy) 0 Picture

Ingredients

  • 1 small onion, coarsely chopped
  • 1 clove garlic, minced
  • 1 T. butter
  • 1 T. minced fresh parsley
  • 1 1/2 t. dried basil
  • 3 C. poultry stock
  • 2 medium tomatoes, finely chopped
  • 1/2 Ib. spinach or chard-type greens, chopped into large pieces
  • 1/2 t. soy sauce
  • Juice of 1/2 lemon
  • 1/4 -1/2 t. freshly ground black pepper
  • parmesan cheese

Preparation

Step 1

In a 3-quart saucepan saute onions and garlic in butter until soft. Add parsley and basil and cook for 2 more
minutes.
Add stock and tomatoes to pan and bring liquid to a slow boil. Then add greens to the hot stock and simmer,
covered, for 15 minutes. Stir in soy sauce, lemon juice, and pepper and serve hot with parmesan cheese
sprinkled on top.
*This is another one of my favorites. This isn't a "hearty" soup so it definitely needs to go with a full dinner.
