Classic Red Tomato Salsa

Ingredients
- 1 28-ounce can of diced or whole tomatoes (NOTE: Buy a little more in case you need to adjust taste)
- 2 5.5-ounce cans V8 Juice
- 3 - 4 small jalepenos or other fresh hot chile, stemmed, and minced (leave seeds for extra spice)
- 1/2 medium red onion, cut in half
- 3 - 4 medium garlic cloves, minced or pressed through a garlic press
- 1 bunch of fresh cilantro leaves
- 2 large limes
- Cumin
- Salt

Preparation
Step 1
1. In blender, add onion, half of the tomatoes, garlic and V8 juice. Blend until you achieve desired consistency.
2. Pour mixture into large bowl.
3. Add the remaining tomatoes, cilantro, and jalepenos to the blender and blend until you achieve desired consistency. NOTE: Use caution with jalepenos. May want to add one at a time to mixture and taste before adding more.
4. Combine into the bowl and add remaining spices and lime juice to taste.
NOTE: Make this in two batches. I reduced the onion to 1/2 of an onion because a full onion made the salsa bitter.
