Ingredients
- 2 1/4 cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup unsalted butter (room temp.)
- 1 cup icing sugar
- 1/2 cup sugar
- 1 egg
- 2 tsp. vanilla
- 1/2 cup raisens
- 1/2 cup each chopped red & green glazed cherries
- vegetable oil

Step 1
Using a fork stir together first three ingredients. Place butter in a large bowl. Using mixer, gradually beat in both sugars until mixture is light (2 minutes). Beat in egg then vanilla. Stir in flour mixture, raisens and cherries.
Divide dough into 3 portions.
Place each on large piece of plastic wrap. Shape into logs about 12" long. Wrap in plastic and refrigerate until firm. At least 4 hours or up to 5 days or freeze up to 1 month.
Preheat oven to 350F. Lightly spray baking sheet with oil. Using serrated knife, slice dough into 1/4 " rounds.
Bake in centre of oven until edges are golden 7 - 10 minutes. Cool on rack.
