Tortellini in Sauce

Ingredients
- 3 tbs. butter
- 1 onion, chopped
- 1 tbs. chopped parsley
- 1 garlic clove, smashed and chopped
- 1/4 ¼ lb. mushrooms, diced
- 1 cup dry red wine
- 2 cups beef stock, heated
- 2 tbs. cornstarch
- 3 tbs. cold water
- 1/2 ½ lb. tortellini, cooked
- 1/2 ½ cup crumbled, cooked bacon
- 1/2 cup grated Parmesan cheese
- Salt and pepper

Step 1
Heat the butter in a skillet. Add onion, parsley, and garlic; cook 3 minutes over low heat.
Mix in the mushrooms and season; cook 3-4 minutes over medium heat. Pour in wine and cook 4 minutes over high heat. Add beef stock and cook 3 – 4 minutes over medium heat; correct seasoning.
Mix cornstarch with water; stir into sauce and cook 2 minutes. Add tortellini, simmer 3-4 minutes; then serve with bacon and cheese.
