Ingredients

  • 10 3/4 ounces condensed cream of chicken soup, undiluted
  • 8 ounces sour cream
  • 1/4 cup chopped onion
  • 1/4 cup melted butter
  • 3 tblspn melted butter
  • 1 tsp salt
  • 2 lbs red potatoes, peeled and diced
  • 8 ounces cheddar cheese, shredded
  • 2 cups stuffing mix

Preparation

Step 1

Chop onion.

Peel and dice the potatoes.

Shred the cheese.

Combine soup, sour cream, onion, 1/4 cup of the butter (not the 3 tblspns) and the salt in a small bowl.

Combine the potatoes and the cheese in the crockpot.

Pour the soup mixture over the potato mixture.

Mix it well.

Sprinkle the 2 cups of stuffing mix over the potato mixture.

Drizzle the remaining 3 tblspns of butter over the top.

Cover and cook on low 8 to 10 hours.
