If you like tacos you will love this as an alternative. This recipe is easy to make for a large crowd. The fact that it is made the day before, makes it great for busy nights or when company is coming for dinner. Also great for those church dinners, etc.

Ingredients

  • FILLING:
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 lb. box velveta cheese, cubed
  • 1 med. onion, chopped fine
  • 1 med. green pepper
  • 1/2 can Rotel tomatoes
  • 1 chicken - boiled and deboned
  • tortilla chips

Preparation

Step 1

Layer chicken in bottom of 13in x 9in baking pan.
Dip tortilla chips in chicken broth after boiling chicken.
Mix all ingredients except tortilla chips. Heat through then pour over chips and chicken.
Top with another layer of soaked tortilla chips.
Bake 1 hour at 300 degrees.
