Ingredients

  • 4 cups blackberries
  • 4 peaches, peeled and cut into chunks
  • 1 cup plus 3 Tbsp sugar
  • 2 cups plus 3 Tbsp flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup canola oil
  • 2/3 cup plain yogurt or buttermilk

Step 1

Preheat the oven to 400 degrees. Spray a 9x13-inch baking pan with cooking spray.

In a large bowl, gently toss the blackberries, peaches, 1 cup sugar, and 3 Tbsp flour until combined. (If the blackberries are very sweet, cut the sugar to 3/4 cup.) Pour the fruit mixture into the baking pan.

In the same bowl, whisk together the remaining flour, baking powder, baking soda and salt. In a measuring cup or small bowl, stir together the oil and yogurt or buttermilk. Add all at once to the flour mixture and stir with a fork until the dough comes together. Knead with one hand in the bowl 6-8 times, until the dough is mostly smooth - do not overwork.

Pinch off clumps of the dough and place on top of the fruit mixture in the baking pan, covering the top. Don't worry if they don't all touch - the biscuit topping will expand in the oven. Sprinkle the biscuits with 3 Tbsp sugar and slide the pan into the oven. Bake 35-40 minutes, until the topping is golden brown and the fruit is bubbling furiously. Cool on a rack at least 10 minutes before serving.
