Curried Chicken Crepes in the French Style

This is the filling for the classic crepes. Se also the cream sauce for the topping.

Ingredients

  • 6 cooked crepes (se classic crepe recipe)
  • 2 T butter
  • 2 T flour
  • 1 tsp curry
  • 1 C milk
  • salt and white pepper
  • 2 1/2 C cooked cubed chicken breast
  • 1 large avocado
  • 1/3 C chopped peanuts
  • 2 - 3 T parmesan cheese

Preparation

Step 1

Make sauce for the chicken curry filling as follows:
melt butter in saucepan
stir in flour and curry
cook 2 minutes
add milk slowly
cook until the sauce is thick

Add the chicken to the sauce above. Halve the avocado and cut into small pieces. Chop the peanuts.

I like to divide the ingredients into little piles to be sure that each crepe has the same amount of filling.

Fill the crepes with the chicken and sauce, avocado, and sprinkle each with peanuts before you roll it up.

Arrange in a baking dish in a line. Cover with cream sauce (see Cream Sauce recipe) down the middle of the line of crepes. Sprinkle parmesan cheese on the line of cream sauce.

Bake at 350 degrees for 10 - 15 minutes.
