Ingredients
- 3 eggs
- 3 egg yolks
- 1 cup sugar
- 2/3 cup lemon juice
- 2 tsp. grated lemon rind
- ½ cup soft butter

Step 1
Combine the eggs, sugar, and lemon in a bowl. Place bowl over boiling water, and beat until thick. Don’t boil. Remove from heat and whisk in butter.
