Lemon Filling

Ingredients

• 3 eggs
• 3 egg yolks
• 1 cup sugar
• 2/3 cup lemon juice
• 2 tsp. grated lemon rind
• ½ cup soft butter

Preparation

Step 1

Combine the eggs, sugar, and lemon in a bowl. Place bowl over boiling water, and beat until thick. Don’t boil. Remove from heat and whisk in butter.
