  • 2 c unbleached all purpose flour
  • 1 tsp salt
  • 2/3 c plus 1 tbsp vegan margarine
  • 1/4 c ice water, or as needed
  • divide recipe in half for one crust

Step 1

combine flour and salt in food processor. blend in the 2/3 c margarine with short pulses until the mixture becomes crumbly. with machine running, add just enough water through the feed tube until the dough just start to hold together. transfer to work surface, divide in half and flatten to form 2 disks. wrap in plastic and refrigerate for 30 minutes.
on a lighlty floured surface, roll out 1 piece of dough to fit a 9 inch pie pan. fit the dough into the pie pan and trim and flute the edges. roll out the remaining dough for the top crust and set aside.
