Fiesta Chicken

Ingredients

• 1 large oven bag
• 2 Tablespoons flour
• 1 can (10Oz) diced tomatoes with green chilies
• 2 Teaspoons chopped, canned or fresh jalapeno peppers
• 6 chicken pieces
• Seasoned salt
• 1 can (15Oz) black beans, rinsed and drained
• 1 medium yellow bell pepper, cut into large chunks
• Hot cooked rice

Preparation

Step 1

Shake flour in oven bag. Place bag in a pan. Add tomatoes and jalapeno to oven bag. Squeeze bag to blend in flour. Sprinkle chicken with seasoned salt; add to bag in an even layer. Arrange beans and yellow pepper around chicken.

Close bag and cut slits in the top. Bake 45 to 50 minutes. Serve over hot rice.
