Ingredients

  • 6 pieces of chicken cut up skin removed (thighs & legs)
  • Sea salt to taste
  • 5 Tablespoons olive oil
  • 2 Garlic cloves minced
  • 1/2 Large onion cut up & diced
  • small bunch of parsley chopped fine
  • 10 Plum tomatoes ( can used canned) quartered and
  • chopped. Add a little salt. (2-3 pinches)
  • 1/2 Cup dry white wine
  • 1/4 Teaspoon of pepper flakes

Preparation

Step 1

Add the the first 6 ingredients to pan and saute.

Stir chicken occasionally and add 1/2 cup dry white wine and some red pepper flakes. Cover and cook on low.

Toss in chopped tomatoes, stir and cook slowly on low heat. Add water if needed.
