Ingredients

  • 1 lb. ground beef
  • 1 cup uncooked rice
  • 1 package frozen corn
  • 1/4 cup Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chili powder
  • 2 cans tomato sauce
  • 3/4 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 4 strips of bacon, cut in halves

Preparation

Step 1

Place rice in the bottom of a buttered two-quart casserole. Add corn and half of the Parmesan cheese. Sprinkle with half other seasonings. Pour one can of tomato sauce plus 1/2 cup water over above layer. Then, in order, layer onion, green pepper and ground beef. Sprinkle with remaining Parmesan cheese and seasonings. Pour on second can of tomato sauce plus 2/4 cup water. Arrange bacon strips on top. Bake at 350 degrees for 1 1/4 hours.
