Ingredients

  • 1 cup flour
  • 2/3 cup sugar
  • 1/4 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup chopped nuts
  • 1/2 cup raisins
  • 1/2 cup cooked pumpkin
  • 1/4 cup milk
  • 3 tablespoons oil
  • 1 egg, beaten

Preparation

Step 1

Combine flour, sugar, pumpkin pie spice, baking powder and salt. Stir in nuts and raisins. Add pumpkin, milk, oil and egg; stir until flour is moistened.

Line 6-cup muffin pan with paper baking cups; fill 2/3 full. Microwave at *medium-low* 5 1/2 to 6 1/2 minutes, or until toothpick inserted near center comes out clean. Let stand 5 minutes.

Repeat procedure with remaining batter. Store covered.
