  • 8 cups ripe strawberries, washed and stemmed
  • 1 lemon
  • 1 package flavored pectin
  • 1/4 cup water
  • 6 1/2 cups sugar

Step 1

Place whole berries in a 6- to 8-quart kettle. Cut lemon in quarters, remove seeds. Grind lemon in blender. Add the ground lemon, the powdered pectin and water and stir gently. Place fruit mixture over high heat and bring to a full, rolling boil, stirring gently. Add all the sugar and bring to a full, rolling boil. Boil hard 1 minute, stirring frequently. Remove from heat and stir gently for 3 minutes to distribute fruit. Carefully ladle hot preserves into hot jars, leaving 1/4-inch headspace. Adjust lids. Process 15 minutes in a boiling water bath canner.
