Ingredients
- 2 cups dried apricots
- 2 1/2 cups water
- 2 cups canned crushed pineapple
- 1/2 lemon, thinly sliced
- 4 cups sugar

Preparation
Step 1
Rinse the apricots. Cover with 2 1/2 cups cold water and soak overnight. Simmer in until tender in the water in which they were soaked. Mash apricots and add remaining ingredients. Simmer, stirring frequently, until thick and clear. Pour into sterilized jars within 1/4" of the top. Put on lid, screw on the band and process 10 minutes in boiling water.
Yields: Approximately 6 (8 oz/half-pint) jars
