Ingredients

  • Sauce:
  • 1/3 cup chopped onion
  • 2 large cloves garlic, chopped
  • 1/2 green pepper, cut in 1-inch strips
  • 1 tablespoon water
  • 1 can (15 ounces) tomato sauce
  • 3 tablespoons honey
  • 1 teaspoon crushed dried oregano
  • 1 teaspoon crushed dried basil
  • Meatballs:
  • 1 pound ground turkey breast meat
  • 1/3 cup chopped onion
  • 1/4 cup finely chopped celery
  • 2 cloves garlic, chopped
  • 1/2 teaspoon crushed dried oregano
  • 1/4 teaspoon crushed dried basil
  • 1/2 cup crackers, processed to fine crumbs
  • 3/4 cup cooked brown rice
  • 2 egg whites
  • Dash white pepper, optional

Preparation

Step 1

Combine sauce ingredients in large skillet, bring to a boil and simmer gently, uncovered, 5-10 minutes to blend flavors.

Combine meatball ingredients and shape into 1-inch balls. Place immediately into simmering sauce. Cover partially and simmer gently 15-20 minutes, until meat is no longer pink inside, turning meatballs during cooking until evenly browned.
