Ingredients

  • Sauce:
  • 1/2 lb. chicken, small pieces
  • 1 egg
  • 3 tablespoons lemon juice divided
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1/2 cup chicken broth
  • Salt
  • 2 tablespoons oil from drippings
  • 2 tablespoons flour
  • 2 tablespoons lemon juice
  • 1 cup chicken broth

Preparation

Step 1

Season chicken pieces with salt. Beat egg and 1 tablespoon lemon juice until light. Dip chicken in egg and lemon juice then in flour. Heat butter and oil in large skillet over medium high heat until hot. Add chicken pieces immediately after coating. Saute quickly on both sides until lightly browned. Remove to serving dish.

Add remaining lemon juice and broth to skillet. Boil vigorously, stirring with wooden spoon to dissolve any pan brownings and reduce to a light sauce.

Spoon sauce over cooked chicken and turn each piece in sauce before serving.
