Jalapenos - Bacon Wrapped Stuffed

Ingredients

• 1 pkg. (8 oz) cream cheese
• 1 cup (4 oz) finely shredded cheddar cheese
• 1 pkg. taco seasoning mix
• 12 large jalapeno peppers
• 12 slices bacon, cut in half

Preparation

Step 1

Preheat oven to 375 degrees. Place baking rack over sheet pan; set aside.

Place cream cheese in small microwavable bowl. Microwave on high 1 minutes; stir. If necessary, heat in 15 sec. increments until softened. Stir in cheddar cheese and taco seasoning mix; set aside.

Cut each jalapeno in half lengthwise; remove seeds and membrane. Fill with cream cheese mixture. Wrap bacon slices around jalapenos; secure with toothpick. Place on prepared rack.

Bake 25 minutes. Turn on broiler; place baking sheet and rack 4-5" from heat. Broil jalapenos 3-4 minutes or just until bacon is lightly browned.

Serve immediately.
