Ingredients

  • 1/2 cup oil
  • 1/2 cup red wine vinegar
  • 3 Tbsp. ketchup
  • 1/4 cup sugar
  • 1 tea. salt
  • 1/2 tea. garlic powder
  • 1/2 tea. dry mustard
  • pepper
  • 1 (10 oz) pkg. fresh spinach
  • 4 hard boiled eggs, sliced
  • 8 slices bacon, crisply cooked, crumbled
  • 1 cup sliced fresh mushrooms
  • 1 small red onion, sliced
  • croutons

Preparation

Step 1

Combine oil, vinegar, ketchup, sugar, salt, garlic, dry mustard and pepper to make dressing. Chill at least 6 hours before serving.

Wash, drain and tear spinach in bite-size pieces.

When ready to serve, toss spinach with eggs, bacon, mushrooms, onion, and dressing.

Top with croutons and serve.
