I got this recipe in High School Home Ec. Class. So, I have had this for a long time.
the texture isn't the same as a normal cheesecake. the preparation time is a guess.
Cooling time is not included.

Ingredients

  • 3/4 cup graham cracker crumbs
  • 1/4 cup butter, softened
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 (8 ounce) package cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon rind, grated
  • 2 cups sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 2 cups frozen strawberries, drained and partially frozen

Total Time: 55 mins

1 For the crust:.

2 Mix crumbs, butter, sugar and cinnamon with a fork in a 9 inch skillet.

3 Press evenly over the bottom and up the sides of the skillet.

4 For the filling:.

5 Beat cream cheese in medium bowl and until light and fluffy.

6 Add eggs, sugar, vanilla and lemon rind.

7 Beat until well mixed.

8 Pour into crumb crust in skilet.

9 Cover skillet and cook on semi-temp at 300* for 20 minutes.

10 For Sour cream topping:.

11 Mix sour cream, vanilla and sugar.

12 Pour over cheesecake filling and spread evenly.

13 Cover skillet and cook for 5 minutes.

14 turn skillet off and remove cover and cool.

15 Strawberry Topping:.

16 spread the 2 cups of strawberries around the outer edge of cheesecake.
