- 3/4 c. finely chopped almonds, divided

- 1 (12-oz.) jar apricot preserves

Step 1
Cream together butter, powdered sugar, 1/4 tsp. almond extract, and lemon juice. Combine flour, 1/2 c. chopped almonds, and salt. Stir dry ingredients into creamed mixture until crumbly. Reserve 1 cup crumb mixture for the topping.
Pat remaining crumb mixture into an ungreased 9 x 13" glass baking dish. Combine apricot preserves and 1/2 tsp. almond extract. Spread over crumb layer in the pan. Top apricot preserves layer with reserved crumb topping. Sprinkle with remaining almonds. Microwave at HIGH 6-8 minutes, rotating dish every 3 minutes. Let bars stand 3-5 minutes before cutting.
