  • 1/2 pkg large marshmallows (5 ounces)
  • 1 cup reduced fat half and half
  • 1 Tbsp pure vanilla extract
  • 1 cup whipping cream
  • NOTE: Use accurate measurements in glass measuring cup.

Preparation

Step 1

1. In a heavy duty sauce pan or pot place the half and half and marshmallows and cook over medium heat, stirring often to fully melt marshmallows. Stir in vanilla extract.
2. When melted, remove pot from heat, cool until room temperature. Then, place pot in refrigerator to cool and thicken mixture (45 minutes). NOTE: Do not refrigerate overnight.
3. When marshmallow mixture is cool, stir it again, then whip the cream until slightly thicken but does not form soft peaks.
4. Fold whipped cream into cooled marshmallow mixture and hand whisk. NOTE: Do not use mixer.
5. Immediately place mixture in electric ice cream maker following manufacturers instructions for making ice cream. Churn for 15 minutes.
