Ingredients
- 1 . veal scllop
- flour
- lemon
- 6 T. white wine
- Knob of butter
- 2 . 1/2 c white wine
- 1 T Chiopped thyme
- juice of 1/2 lemon
- 2 T butter
- 3 . Slices of prsciutto
- sage leaves
- 3/4 c white wine

Preparation
Step 1
1. Flatten meat
lightly coat with flour
cook for 40 to 50 seconds per side
pour off, and dscard excess fat.
Add wine and simmer. Season to taste,
Add juice of half of lemon about 1 min. Dilute the cooking juices with little water or broth. Add finely chopped parsely and a knob of butter. Pour over scaloppine.
2. after sauteing veal add wine to skillet and stire in thyme and lemon juice and butter
3. After cooking add wine simmer about 2 min. Transfer meat to warm plate. Add 2 T butter adn 1 T flour to pan whisking until sauce is thickened. Spoon over meat.
