Ingredients

  • 1 lb. ground beef
  • 1 envelope taco seasoning
  • 1 egg
  • 1 can (4 oz.) green chiles, chopped
  • 1/2 c. chopped onion
  • 1 Tbs. margarine
  • 2 Tbs. flour
  • 1/2 c. milk
  • 1 1/2 c. (6 oz.) shredded cheddar cheese
  • 1/2 c. (2 oz.) shredded Monterey Jack cheese
  • 2 T. chopped tomato

Step 1

Mix the beef, taco seasoning and egg. Shape into 1" balls. Place in a single layer in a 10" square casserole. Microwave on HIGH (100%) until brown, 7-10 minutes. Drain; cover and set aside.
Combine chiles, onion and margarine in a 2 quart casserole. Microwave on HIGH (100%) until onions are tender, 2-3 minutes. Blend in flour; stir in milk until smooth. Microwave on HIGH (100%) until thickened, 3-4 minutes, stirring once or twice.
Stir in cheese and tomato. Microwave on MEDIUM HIGH (70%) until cheese is melted and smooth, 1-2 minutes, stirring once or twice. Add meatballs. Place in chafing dish and serve hot.
