Ingredients

  • Cookies:
  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • ½ teaspoon vanilla
  • 1 cup mashed banana (2 medium)
  • Banana Frosting:
  • 2 cups powdered sugar, sifted
  • ¼ cup mashed banana (1 small)
  • 2 tablespoons butter, softened
  • ½ teaspoon vanilla

Step 1

To prepare your cookies, begin with sifting your flour, baking powder, cinnamon, baking soda, and salt into a large mixing bowl. Then add your softened butter to the bowl of an electric mixer and mix on medium/high until creamy, about 30 seconds.

Add your sugar and continue to mix on medium/high speed until fluffy, about 1 minute. Then add your eggs and vanilla, mixing on medium speed for about 30 seconds until combined.

Mash 1 cup of ripened bananas and set aside. Add 1/3 of the flour mixture to your batter on low speed until just combined then add half of the mashed bananas. Continue alternating the dry ingredients and mashed bananas adding another 1/3 of the dry mixture, then the rest of your mashed bananas, then finishing with the last of the dry ingredients. Making sure not to over mix, but to mix until just combined.

Meanwhile grease a cookie sheet with butter. Scoop about 1 teaspoon of batter and place it on your cookie sheet, making sure to space the cookies about 1.5 inches apart. Bake at 375 degrees for 10-12 minutes or until just golden brown and immediately transfer your cookies to a cooling rack.

To prepare your frosting, combine the remaining ¼ cup mashed banana, softened butter, and vanilla in a small bowl. Sift your confectioners sugar into your bowl and mix until combined. Then chop your walnuts and set aside. Once your cookies have cooled, spread frosting over your cookie and finish with a sprinkling of chopped walnuts. Plate them and enjoy!
