Ingredients
- 6 tbsp. Lundberg brown and wild rice blend
- 12 tbsp. chicken broth
- 2 squares Europe's Best frozen spinach
- pinch of coarse sea salt
- freshly ground pepper
- 2 good tablespoons Roasted Cherry Tomatoes with basil and garlic (about 10 tomatoes or so) with some of the oil they are stored in

Preparation
Step 1
* *Put* everything except the tomatoes in a pot. *Bring* to a boil, cover and cook on low heat for one hour without disturbing.
* After an hour, *add* the tomatoes and stir them into the rice. *Recover* and set aside for five or ten minutes. If the rest of dinner isn't ready yet, put them on the keep-warm element.
* *Plate* and serve. Needs no extra oil or butter or seasoning.
Good, easy side dish.
