Ingredients
- 2 8oz packages cream cheese, softened
- 1/4 ¼ cup sugar
- 1/2 ½ tsp. vanilla
- 9 inch pie shell, baked
- 16 oz. can peaches, sliced and drained
- 1/4 ¼ cup raspberry preserves
- 1 tsp. lemon juice

Step 1
Combine the cheese, sugar, and vanilla. Mix until well blended. Spread the cheese onto the bottom crust, and chill several hours or overnight. Top with peaches just before serving. Combine the preserves and juice, mixing until well blended. Spoon over the peaches and garnish with fresh mint.
