Ingredients

  • Base

  • ½ cup butter

  • ¼ cup sugar

  • cup cocoa

  • 1

    tsp vanilla

  • 1

    egg (beaten)

  • 1

    cup unsweetened coconut

  • 2

    cups graham wafer crumbs

  • ½ cup walnuts

  • Filling

  • ¼ cup butter

  • 2

    Tbsp custard powder

  • ½ tsp salt

  • 2

    Tbsp milk

  • 2

    cups icing sugar

  • Top Layer

  • 2

    squares unsweetened chocolate

  • 2

    squares semi-sweet chocolate

  • 1

    Tbsp butter

Directions

Bottom Layer – In a saucepan over low heat, melt the butter and add the sugar, cocoa, vanilla and egg. Cook, stirring over medium heat until the mixture thickens slightly, approximately 1 minute. Remove from heat and stir in the coconut, crumbs and walnuts. Pat firmly into a buttered 9 inch square pan. Chill for 1 hour Filling – In a medium bowl, cream the butter and beat in the milk, custard powder, icing sugar and salt. If too thick to spread, add another tsp of milk. Spread over the first layer and refrigerate until firm. Top Layer – Set a dish over hot water and melt the chocolate and butter. Spread over the filling and chill.
