Ingredients
- Cookie Bar
- 1 ¼ cups flour
- 1 cup almond meal
- 1 t. baking soda
- ½ t. salt
- 1 cup butter
- ¾ cup sugar
- ¾ cup brown sugar
- 1 ½ T. vanilla paste
- 2 eggs
- 1 T. espresso powder
- 2 cups semi-sweet or dark chocolate chips
- 1 cup chopped pecans
- Peanut Butter Cream
- 7 oz. marshmallow cream
- 1 cup peanut butter
- ½ cup shredded coconut

Preparation
Step 1
Preheat oven to 350ºF. Stir flour and almond meal with baking soda and salt; set aside. Beat coconut oil with sugars until creamy. Add vanilla paste and eggs one at a time mixing on low speed.
Gradually blend dry mixture into creamed mixture. Add espresso powder and mix until blended. Stir in chocolate chips and pecans.
For the truffle center, mix all ingredients together until well blended.
Grease a 9x13 pan and press half of the cookie bar mixture into the bottom. Then spread the truffle cream over the cookie bar base. Then cover the truffle completely with the rest of the cookie bar dough.
Bake for 40-45 minutes.
