Pressure Cooker Steamed Potatoes with Dill Butter 1 Picture

  • 2 1/2 lbs. Medium red-skinned potatoes, peeled and cut into 1/4 inch thick rounds
  • salt, to taste
  • 3 Tbs. unsalted butter
  • 2 Tbs. chopped fresh dill
  • pepper, to taste

Step 1

1. Place a collapsible aluminum steamer in a 5-7 quart pressure cooker. Add the minimum amout of water as required by your cooker to bring up pressure. This could be anywhere from 1/2 to 1 1/2 cups, but do not let the water touch the bottom of the steamer. Place the potatoes in the steamer, seasoning them lightly with salt. Lock the lid in place. Bring to high pressure over high heat. Adjust heat to maintain pressure. Cook for 2 minutes, 45 seconds. Remove from the heat and quick release the pressure. Check the potatoes for tenderness. If necessary, cover the pot with the lid (do not lock) and steam the potatoes over medium heat until tender.

2. Transfer the potatoes to a medium bowl. Add the butter and dill and toss. Season with pepper and salt. Serve immediately.
