• Preheat the oven, and place a pan on the bottom rack of the oven, and pour hot water into the heated pan right before placing the loves in the oven in order to generate steam.
• Straight method of mixing dough – all the ingredients are mixed together to form a dough that is ready to knead. For this method add 2/3 cup flour to all the other dry ingredients. Dissolve yeast in warm water/liquid and stand 5 minutes. Add the remaining liquid to the yeast mist and whisk. Add the yeast to the flour mixture.
• Sponge method – small quantities of the main ingredients are combined and allowed to ferment before the remaining ingredients are added.
• If dough has risen sufficiently, poke with a fingertip and the impression should remain in the dough.
• Milk brushed on the dough at the end of the baking period will give the dough a golden crust.
