Ingredients
- 16 Anaheim peppers, stems and seeds removed
- 4 T oil
- 1 c grated Jack cheese
- 1 c goat cheese, crumbled
- 1 T thyme leaves
- 1 t rosemary leaves
- 3 sage leaves, minced
- 1 blue cornmeal

Preparation
Step 1
Heat oven to 450 degrees. Brush peppers with oil and roast to black x 10 minutes. Cover pan and let sweat x 15 minutes. Mix cheese,thyme,rosemary,sage and mash together. Peel peppers. Put 2 T cheese mix inj each. Heat oil, roll stuffed peppers in cornmeal and sear, undisturbed to keep cornmeal on.
