Ingredients

  • 16 Anaheim peppers, stems and seeds removed
  • 4 T oil
  • 1 c grated Jack cheese
  • 1 c goat cheese, crumbled
  • 1 T thyme leaves
  • 1 t rosemary leaves
  • 3 sage leaves, minced
  • 1 blue cornmeal

Preparation

Step 1

Heat oven to 450 degrees. Brush peppers with oil and roast to black x 10 minutes. Cover pan and let sweat x 15 minutes. Mix cheese,thyme,rosemary,sage and mash together. Peel peppers. Put 2 T cheese mix inj each. Heat oil, roll stuffed peppers in cornmeal and sear, undisturbed to keep cornmeal on.
