  • 11 oz pkg butterscotch chips
  • 3/4 ¾ C. (2 medium) mashed bananas
  • 1 pkg yellow cake mix
  • 1/2 ½ C. vegetable oil
  • 4 large eggs
  • 1/4 ¼ C. water
  • 1/4 ¼ C. sugar

Step 1

Preheat oven to 375. Grease bundt pan.

Microwave 1 1/3 C. butterscotch chips in microwave safe bowl on medium power (70%) for 1 minute. STIR. Microwave at additional 15 second intervals, stirring until chips are melted.

Combine cake mix, water, eggs, oil, bananas and sugar in mixer bowl. Beat on low until moistened. Beat on high for 2 minutes. Stir 2 C. batter into melted chips. Alternately spoon batters into bundt pan.

Bake for approx. 35 minutes-until toothpick comes out clean. Cool in pan for 20 minutes. Invert onto wire rack to cool completely. Place remaining butterscotch chips in a ziplock bag and microwave at 70% for 30 seconds. Knead bag. Microwave at additional 10 second intervals until chips are melted. Cut tiny hole in corner of ziplock and drizzle on top of the cake.
