Ingredients
- Coconut Lime Rice (recipe in pasta cookbook)
- 1 1/2 lb peeled, large raw shrimp (16-20 count)
- 3 T olive oil, divided
- 1 c chopped green onions
- 1 c diced red bell pepper
- 2 garlic cloves, minced
- 1 T grated fresh ginger
- 1/2 to 1 t dri3ed crushed red pepper
- 1 c chopped fresh mango
- 1/4 c chopped fresh cilantro
- 1/4 c soy sauce
- 2 T fresh lime juice
- topping: toasted sweetened flaked coconut

Preparation
Step 1
1. Prepare rice
2. Meanwhile, saute half of shrimp in 1 T oil in a large skillet over med hi heat 2-3 min or just until shrimp turn pink. Remove and repeat procedure with other shrimp.
3. Saute onions and next 4 ingredients in remaining 1 T oil over med he heat 1 min. Stir in mango and next 3 ingredients., and cook 1 min; stir in shrimp. Serve over hot cooked Coconut Lime Rice and top with toasted coconut.
