Ingredients

  • 1/2 cup each granulated sugar and confectioners’ sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups all-purpose flour

Preparation

Step 1

1. Beat butter and sugars in large bowl with mixer on low speed until fluffy. Beat in egg, vanilla, baking powder and salt. Beat in flour just until blended.

2. Divide dough in half; shape each into a 1-in.-thick disk and wrap separately in plastic. Chill 1 hour or until firm.
3. Heat oven to 350°F. Line baking sheet(s) with parchment, nonstick foil or reusable nonstick liners.

4. On floured surface, roll out 1 disk of dough to a scant 1/4-in. thickness. Using a floured 31/2-in. round cutter, cut out 10 circles. Transfer with a floured spatula to a prepared baking sheet, 2 in. apart. Re-roll scraps and cut out 10 mini-doves; transfer to a baking sheet. Bake 11 to 13 minutes for large round cookies, and 8 minutes for doves, until cookies are golden at edges. Cool slightly on sheet on a wire rack; move to rack to cool completely.

6. Using photo as a guide, tint some of the decorating icing blue and thin with water to a spreading consistency; spread on large round cookies. Let dry 2 hours. Tint some decorating icing light green; place in pastry bag with plain tip. Pipe continents; let dry. Sprinkle with green decorating sugar. Ice doves with some thinned white icing; while wet, place a pink nonpareil eye on each dove. Let dry. Attach dove to earth cookie with a dab of icing.

Decorating Icing: Beat 1 lb confectioners’ sugar (3 1/4cups) and 1/4 cup Just Whites (see Note) in a large bowl with mixer on low speed until combined. Add 1/3 cup water; beat until blended. Increase speed to high; beat 8 minutes or until icing is very thick and white. Makes 2 1/2 cups.
