Ingredients

  • 1 tbsp. vegetable oil
  • 1 tbsp. sesame oil
  • 2 (1 lb.) pork tenderloins,trimmed and cut into 1/2 inch pieces
  • 1 bunch broccoli, cut into flowets
  • 3 carrots, thinly sliced
  • 1 red pepper, chopped
  • 1 cup coarsely chopped onion
  • 1 (8 oz.) package sliced baby bella mushrooms
  • 1 (15 oz.) can whole baby corn, drained
  • 1 (8 oz) sliced water chestnuts, drained
  • 1 cup chicken broth
  • 1/4 cup hoisin sauce
  • 1 tbsp. soy sauce
  • 1 tsp. ground ginger
  • 2 tbsp. cornstarch
  • Hot cooked rice noodles

Step 1

1. In a large skillet, heat oils over med high heat. Add pork; cook, 8-10 minutes, or until lightly browned. Add broccoli, carrots, pepper, onion, and mushrooms; cook 8 minutes, stirring frequently. Stir in corn and water chestnuts.

2. In a small bowl, combine broth, hoisin sauce, soy sauce, ginger, and cornstarch. Add to pork mixture. Bring to a boil over medium high heat; reduce heat, and simmer 4-5 minutes, or until sauce is thickened. Serve over hot cooked rice noodles.
