Ingredients
- 1 large egg
- 2 large egg whits
- 3 tablespoons butter, melted
- 1 1/4 cups buttermilk
- 1 teaspoon vanilla extract
- 1 cup cornmeal
- 1/2 cup white whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup Splenda
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt

Preparation
Step 1
1. Preheat the oven to 375 degrees. Spray a 12-muffin-cup pan with nonstick baking spray.
2. In a medium bowl mix together the first 5 ingredients (egg throuh vanilla) until combined.
3. In a separate large bowl, whisk together all the remaining ingedients. Pour the west ingredients into the dry ingredients and mix with a spoon until all ingredients are combined.
4. Scoop the batter evenly into muffin cups and bake for 12 to 13 minutes, or until cornbread springs back when touched lightly in center.
