With it's incredible flavor and bit of heat, this has become my most favorite soup ever! If you enjoy the flavors of curry this recipe is a must try! (This recipe has been adapted from both a post by Kathy at Wives with Knives and a publication in the Winnipeg Free Press.)

Preparation
Step 1
In a soup pot gently saute the onion in the sesame oil until soft. Add the garlic and cook for 2 minutes. Add the spices and the rice and cook, stirring often, for about 5 minutes to release the flavor from the spices. Add the cooked chicken, the broth, tomatoes and tomato paste; cook at a low boil, stirring occasionally, until the rice is just tender. Stir in the peanut butter, coconut milk and chopped peanuts; simmer for 10 minutes. Enjoy! For more recipes and instruction, visit my blog Apron Strings and Tasty Things at www.foodandfact.com
